Beef pricing:
Beef is available in quarters, halves, or a whole animal. A quarter is called a "split side" and is actually 1/2 of a front quarter and 1/2 of a rear quarter, This way you get a mix of front and back cuts. When the animals are taken to the butcher they are assigned to a customer. The butcher provides us with the weight of each customers animal. A 1/4 beef (split side) will cost between $600 and $800 depending on the size of the animal. This amount is what you owe us for the animal, you pay the butcher for their work and that usually runs $175-$250 for a 1/4 beef, again based on size of the animal. Beef is typically available from April through November. Please contact us to confirm availability. We schedule animals with the butcher months in advance due to their busy workload. You pay the butcher for their services when you pick up the meat.
Hog pricing:
Hogs are available in halves or whole animals. As with beef, the animals are assigned to a customer and the butcher provides us the weight of each customers animal. Pricing on hogs will generally range from $175-$225 for a 1/2 hog. This is the amount you owe us for the hog. Butchering costs are approximately $175-$225 for a 1/2 hog. Hogs are available usually in spring and fall. We may have some available at other times also so please contact us if you have any questions. You pay the butcher for their services when you pick up your meat.
Meat ordering process for beef and pork:
We schedule a certain number of animals with the butcher and then assign our customers to an animal on a first come first served basis. We will contact you when we have a firm butchering date and you can then call the butcher and place your order for how you want the meat cut. You get to choose how thick you want your steaks, how many in a pack, size of roasts, what size packages of ground you want, etc. They process the meat to your request. We will let you know how much you owe us and when it will be ready to pickup. After the bills are settled up you can pick up your meat, go home and proceed to enjoy your local, sustainable, delicious meat.
